WHAT IS BILTONG?
Now that we’ve agreed how to say it, let’s talk about how this meat became a global obsession. If you’ve never had biltong before, here’s the quickest explanation we can give. It’s not jerky. (We’ll get to that fight later.)
A few hundred years ago, before fridges were sitting in every kitchen, South Africans had a problem. The meat didn’t stay fresh forever. So they had two options:

STORAGE
Good news: biltong is pretty low maintenance. Just don't lock it away in an airtight container. It likes a bit of airflow, which helps it stay at its best.
A few simple tips:

Store it on the kitchen counter, in the pantry, or in the fridge, whatever works best for you.

Freeze it? Absolutely. Just let it come back to room temperature for a few minutes before digging in.

Keep it moving. Give the bag a little shake every day or so to help the biltong breathe. Shake that thang.
Leaving it on the counter is perfectly fine... assuming the family dog (or a suspiciously snack-loving family member) doesn't discover where you've hidden it first. We've seen both happen more times than we'd like to admit.

You’re in good hands here too because biltong was made to last. The only question is, how long will it stay in your possession before you demolish the stash?
How long it lasts depends on how you bought it.

If you’ve picked up your biltong in one of our paper bags, it’s already breathing. That means it’ll continue to dry out over time.
Some people love their biltong extra dry. Others prefer it a little softer.
If you’re chasing the texture you got freshly sliced, we’d recommend enjoying it within the first few days.

BILTONG VS JERKY
Alright, here's where things get a little sensitive.
Do they belong in the same family? Absolutely.
Are they the same thing? Not even close.
(We may be a little biased here, but hear us out.)
Both biltong and jerky started with the same goal: preserve meat and make it last. The difference is in how they get there.
Jerky is typically cooked or smoked while being dried, often using heat to remove moisture from the meat. This creates that familiar firm, chewy texture that most people know.
Biltong takes a different approach. Instead of cooking the meat, biltong is cured and air-dried, allowing the natural flavours of the beef to develop over time. The outside dries first, creating that signature crust, while the inside keeps a softer, more tender texture.
The result?
Two very different snacks that started with the same idea. Jerky is smoky, chewy, and familiar. Biltong is rich, savoury, and (in our completely unbiased opinion) in a league of its own.

SO WHAT’S THE VERDICT?
The funny thing about biltong is that people almost never buy enough the first time.
They'll ask for "just a little bag to try." Three days later they're back. This time they're buying half a kilo.
